After several attempts at making the best tasting Apple Spice Cupcake this is what I have come up with. I hope you like it as much as my family and I did.
The biggest problem I found when coming up with this is that the apple would sink to the bottom of the cupcake or make the cupcake a bit mushier than I was looking for. I am still looking for the best icing for this cupcake, so I used our cream cheese frosting this time; however, I am trying to make a great caramel icing to go with it.
2 CUPS SUGAR
1 1/2 CUPS OIL
2 CUPS FLOUR
2 1/2 CUPS GRATED APPLE
2 tsp BAKING SODA
½ tsp ALLSPICE
½ tsp NUTMEG
PREHEAT OVEN 350
GREASE AND FLOUR BUNDT PAN OR IN OUR CASE PREPARE THE CUPCAKE PANS WITH LINERS.
MIX DRY INGREDIENTS TOGETHER. ADD EGGS, OIL THEN COMBINE TOGETHER IN MIXER AND MIX TOGETHER.
LINE CUPCAKE PAN WITH CUPCAKE LINERS THEN FILL ¾ FULL.
BAKE AT 350 FOR 15 MINUTES OR UNTIL A TOOTHPICK COMES OUT CLEAN.
