These cupcakes were inspired by the carnival pop my wife brought home as inspiration or as a topping for my next cupcake. My four-year-old saw the carnival lollipop and said it was amazing and looked so yummy could she eat it. My wife told her I was going to use the carnival lollipop as decoration on top of a vanilla cupcake. So, in deciding how to add the 3-inch lollipop to the top was the trick. At first, every time I cut or broke the carnival lollipop it just became crushed slivers. To me, it started to look like a pile of sprinkles, so I that I would make the vanilla cupcakes with sprinkles inside as well as the sprinkle looking topping. I believe it turned out awesome and great tasting again.
The cupcakes are made the same way the plain vanilla cupcakes are, but I added sprinkles to the batter just before filling the cupcake liners. The one thing I did note when doing it this way was that most of the sprinkles sank to the bottom of the cupcake. I’ll be testing different ways of adding them to the batter and will update when I get better results.
3 ½ Cups of sifted cake flour
2 Cups of sugar
1 Tbsp Baking Power
1/2 tsp Salt
1 Cup Unsalted Butter (2 Sticks)
1 Cup Whole Milk
4 large eggs
2 Egg Whites
½ Cup Sprinkles – ¾ cup depending on how many you want in each cupcake.
Eggs, butter, and milk should all be at room temperature before you start. It’s best to get these ingredients out about an hour before you plan on starting. You don’t want to get the butter out so soon that its squishy. It should be soft but still, hold its shop when you pick it up.
Preheat your oven to 350°
Sift your cake flour then measure out 3 1/2 cups then sift salt baking powder and flour together into mixing bowl.
Whip together the milk, eggs and egg whites is a small bowl. Set aside.
Add butter to the flour mixture. I like to cut the butter into small patties so that it mixes into the flour mixture faster and clumps less.
After butter and flour is being thoroughly mixed together Add the milk-egg mixture 1/3 at a time.
Let the first third mix for 2 minutes taking a spatula and scraping down the sides and bottom halfway through. Start off slow so you don’t splash the milk-egg mix out the mixer.
Mix once again for 2 minutes and scrape with your spatula halfway through. The mix will be lighter and much easier to scrape the sides. Add the sprinkles and mix gently.
The last 2 minutes stopping one last time to scrape the sides of the bowl.
2 sticks unsalted butter
2lb powdered sugar
1 tsp vanilla extract
In mixing bowl place 2 sticks of softened butter and mix till creamy.
Add one cup of powdered sugar and mix slowly
Add 1 tsp vanilla and 3tbls of milk mixing on low
Add remaining powdered sugar and continue to mix till combined.
Test the icing for consistency. I put a small amount of icing on a spatula then tap it with one finger and look for a peak to form. If it’s too thick I add remaining milk. Remember you can always add but you can’t take out.
Crushed Carnival Lollipop
Crush a Carnival Lollipop and set aside till cupcakes are cooled and frosted. Add the crushed carnival lollipop to the top of the frosted cupcake and if there are any slightly big chunks of the carnival lollipop left add that to the top of the cupcake after you have put the crushed pieces of carnival lollipop on the cupcakes.
